The brilliance of this wine is its railroad track of acidity that leads to a wonderfully chewy finish of cherry and fig bars. Aged in neutral and once used French and American oak for 33 months

Food Pairing: Short ribs with caramelized onions and polenta; beef or veggie enchiladas with mole negro; eggplant moussaka; bell peppers stuffed with farro, squash, leeks, Fontina and pumpkin seeds.
